Method
- Peel the potatoes, and boil them until tender.
- Drain, and mash with the butter.
- Add salt and pepper and nutmeg to taste. Mix in the flour and eggs.
- With damp hands, form the dough into sections.
- Heat the oil in a skillet over medium-high heat.
- Fry the pancakes until crispy and cooked through. Drain well before serving.
