Method
- Preheat the oven to 350 degrees.
- Coat a 12 muffin pan with nonstick baking spray.
- In a large bowl, add the flour, baking powder, salt, and nutmeg, whisk to combine.
- In a separate medium sized bowl, add the sugar and shortening.
- Cream to combine on medium speed of a hand mixer.
- Add the egg to the sugar mixture and continue to beat to combine.
- Begin to add the flour, and milk to the sugar mixture adding ⅓ add a time. Scoop the batter into the muffin pan.
- Bake for 20 to 25 minutes.
Topping:
- In a small bowl add the sugar and cinnamon stir to combine. Remove muffins from the oven.
- Flip the baking pan over and carefully remove the muffins. Dip each of the muffins into the melted butter, then into the sugar mixture. Set to the side.
- Serve warm and enjoy!
