Easy Pancakes

These Breakfast Pancakes are going to become a breakfast staple in your home! Serve with eggs and bacon for a hearty, balanced and delicious keto breakfast!

Ingredients
  

  • 2 oz Cream cheese softened
  • 2 Eggs
  • 1 tsp Vanilla extract
  • 1 tbsp Coconut flour
  • ½ tsp Baking powder

Method
 

  1. In a mixing bowl, combine the softened cream cheese and eggs. Beat until smooth and creamy.
  2. Add in the coconut flour, vanilla and baking powder. Stir to combine, and let sit for a minute or two to thicken.
  3. Pour the batter by the ¼ cup into a greased non-stick skillet, and cook the pancakes for 1-2 minutes on one side, flip, and cook for an additional minute on the other side.
  4. Repeat step 3 until you have made all four of your pancakes. Top with fresh fruit, your favorite low carb syrup or other toppings of your choice.
