In a mixing bowl, combine the softened cream cheese and eggs. Beat until smooth and creamy.
Add in the coconut flour, vanilla and baking powder. Stir to combine, and let sit for a minute or two to thicken.
Pour the batter by the ¼ cup into a greased non-stick skillet, and cook the pancakes for 1-2 minutes on one side, flip, and cook for an additional minute on the other side.
Repeat step 3 until you have made all four of your pancakes. Top with fresh fruit, your favorite low carb syrup or other toppings of your choice.
