Creamy Garlic Butter Chicken

Not only is this a very cheap recipe to make but it’s also a versatile one. You can use chicken legs, thighs, breasts or even a whole chicken if you cut it up into pieces. You will also be pleasantly surprised how much the garlic flavor works with the creamy chicken. You might see the recipe calls for 15 (yes 15!) garlic cloves but honestly that amount is perfect. If you have large garlic cloves you might want to reduce it to 8-10 however.

Ingredients
  

  • 3 Dashes cayenne pepper
  • 15 cloves of garlic
  • 1 ½ lbs. Chicken legs and thighs
  • 1 C. Chicken broth
  • 2 Tbsp. Parmesan cheese grated
  • 4 Tbsp. Butter melted
  • ¼ C. Heavy whipping cream
  • Salt and pepper to taste
  • 1 Tbsp. Fresh chopped parsley

Method
 

  1. Heat some oil in a large skillet over medium high heat.
  2. Season the chicken with salt and pepper to taste, and sear in the hot oil until the skin is browned and crispy and the chicken is cooked nearly through. Remove the chicken and set aside.
  3. Reduce the heat to medium.
  4. Add the butter to the skillet.
  5. Stir in the garlic, and saute for 1-2 minutes until fragrant.
  6. Pour in the heavy whipping cream, parmesan cheese and chicken broth. Simmer until the sauce thickens.
  7. Add in salt and pepper to taste.
  8. Place the chicken back into the skillet, and reduce the heat to low. Cover and simmer until the chicken is cooked through. Toss to coat the chicken in the sauce before serving.
