Preheat the oven to 425 degrees.
Drain the shredded zucchini of any excess liquid, and add it to a mixing bowl.
Place the egg, garlic powder, parmesan cheese, salt and pepper to taste and ½ cup of the Mozzarella cheese into the bowl with the zucchini. Mix to combine well.
Press the zucchini mixture into a parchment lined rectangular baking dish.
Bake for 15 minutes. Remove and top with the remaining mozzarella cheese.
Bake for another 10 minutes, or until browned to your liking. Slice into breadsticks and serve.
