Method
- Heat the oven to 400 degrees.
- Knead together all of the ingredients for the meatballs in a large mixing bowl until well combined.
- Form the mixture into evenly sized meatballs, and place onto a parchment lined baking sheet.
- Baked for 25 minutes
- Reduce the oven temperature to 350 degrees.
- Spread ¼ of the enchilada sauce over the bottom of an oven-proof skillet.
- Add the meatballs to the skillet, and top with the remaining enchilada sauce.
- Sprinkle with the Mexican blend cheese.
- Bake for 15 minutes.
