Layer the waffle fries on a baking sheet, and bake in a 400-degree oven according to the package instructions.
While the fries are baking, heat the olive oil in a skillet over medium-high heat.
Add the onions to the skillet, and saute until beginning to soften.
Stir in the ground beef, and saute until completely browned. Drain the excess far.
Stir in the taco seasoning, and simmer for a minute or two.
Layer the meat in the taco shells, and top with the shredded cheese. Bake for about 5-10 minutes, or until the cheese melts.
Remove the waffle fries and toss in buffalo sauce. Garnish with green onions.
Top the tacos with lettuce, tomato and diced avocado. Garnish with sour cream and guacamole if desired.
