Method
- Heat olive oil in a pot over medium heat. Add onion and cook until fragrant, around 6 minutes. Add butter and flour and cook for 3 minutes or until the flour is golden.
- Add roasted butternut squash, mix with the onion and cook for 3 more minutes.
- Pour stock, bring to a simmer and cook covered for 15 minutes.
- Add milk and cheddar cheese and mix until thick and creamy.
