Blueberry Cheesecake Cookies

I love these blueberry cheesecake cookies because they are a wonderful blend of two classic treats. The creamy center of cream cheese combined with the hint of sweetness in the cookie dough gives them a unique and delicious flavor.

Ingredients
  

  • ½ C. Brown sugar
  • 2 Boxes of Jiffy blueberry muffin mix
  • 2 Large eggs
  • 4 oz. Cream cheese softened
  • 1 ½ C. White chocolate chips
  • 8 Tbsp. Butter

Method
 

  1. Blend together the cream cheese, brown sugar and butter until smooth.
  2. Beat in the eggs.
  3. Stir in the blueberry muffin mix until well combined.
  4. Add the chocolate chips to the batter and fold in well.
  5. Chill the batter for 1 hour.
  6. Heat the oven to 325, and line a baking sheet with parchment paper or grease it well.
  7. Drop the batter by the spoonful onto the baking sheet, and bake for 12-15 minutes, or until cooked through.
  8. Let the cookies cool before serving.
