Ingredients
  

  • 2 Large Boneless skinless chicken breasts
  • ¼ C. Pesto sauce
  • 2-3 C. Raw spinach
  • 2 Small tomatoes chopped
  • 1 C. Marinated artichoke hearts
  • ¼ C. Parmesan cheese grated
  • 1 ½ C. Mozzarella cheese
  • Salt and pepper to taste if desired

Instructions
 

  • Preheat the oven to 375 degrees.
  • Slice the chicken breasts in half lengthwise to form four servings of chicken.
  • Place the chicken in a single layer in the bottom of a baking dish. Add salt and pepper to taste if desired.
  • Spread the pesto sauce evenly over the chicken pieces.
  • Top the chicken with the spinach, marinated artichoke hearts and tomatoes.
  • Sprinkle the parmesan cheese over the casserole.
  • Top the mixture with the mozzarella cheese.
  • Bake for 35-40 minutes until the chicken is cooked through.
