Preheat the oven to 400 degrees.
Place the 8 strips of bacon onto a baking rack on a baking sheet, and cook for 10-15 minutes until crispy. Reserve 1 tbsp of the bacon grease from the cooked bacon.
In a mixing bowl, smash 4 hard boiled eggs with a fork until crumbled well.
Add in ½ of a ripe avocado, and use the fork to incorporate the avocado into the eggs.
Add salt and pepper to taste, as well as the reserved bacon grease to the egg mixture, and stir to combine well.
Crumble the cooked bacon into a bowl.
Roll the egg mixture into 6 even balls, and roll each one into the crumbled bacon pieces.
Place the bacon and egg bites onto a plate, and place them in the fridge for at least 30 minutes to firm up. Serve, or store in an airtight container in the fridge.
