Keto Bacon and Egg Bites

If you are looking for a way to spice up your breakfast this Keto Bacon and Egg Bites will be a hit.

Ingredients
  

  • 4 Hard boiled eggs
  • 8 Strips of bacon
  • 1 tbsp Reserved bacon grease
  • ½ Ripe avocado
  • Salt and pepper to taste

Instructions
 

  • Preheat the oven to 400 degrees.
  • Place the 8 strips of bacon onto a baking rack on a baking sheet, and cook for 10-15 minutes until crispy. Reserve 1 tbsp of the bacon grease from the cooked bacon.
  • In a mixing bowl, smash 4 hard boiled eggs with a fork until crumbled well.
  • Add in ½ of a ripe avocado, and use the fork to incorporate the avocado into the eggs.
  • Add salt and pepper to taste, as well as the reserved bacon grease to the egg mixture, and stir to combine well.
  • Crumble the cooked bacon into a bowl.
  • Roll the egg mixture into 6 even balls, and roll each one into the crumbled bacon pieces.
  • Place the bacon and egg bites onto a plate, and place them in the fridge for at least 30 minutes to firm up. Serve, or store in an airtight container in the fridge.
