Peanut Butter Pretzel Bites

You get a little bit of everything in these pretzel sandwiches - smooth, crunchy, creamy, salty, and sweet, all at once.

Ingredients
  

  • 72 mini twist pretzels
  • 3 tablespoons softened salted butter
  • ½ cup peanut butter
  • ½ teaspoon salt
  • ¾ cup dark chocolate chips
  • ¾ cup powdered sugar
  • 2 tablespoons white sugar

Instructions
 

  • Beat the butter with the peanut butter, white sugar, and salt.
  • Beat in the powdered sugar, bit by bit, until you have a soft dough.
  • Line a sheet pan with parchment paper.
  • Roll ½ tablespoon of the peanut mixture into a ball.
  • Press a pretzel into each side to make a sandwich that’s about ½-inch thick.
  • Repeat with the remaining filling and the remaining pretzels.
  • Put them on the sheet pan and freeze for 30 minutes.
  • Microwave the dark chocolate chips for 15 seconds, then stir and repeat until melted.
  • Dip the pretzel sandwiches in the melted chocolate and put them back on the parchment paper.
  • You can sprinkle over a little sea salt too if you want.
  • Freeze for 15 minutes or until set, then serve.
