Key Lime Poke Cake

This amazing key lime poke cake is tasty, creamy and delicious. It makes a great dessert or snack and is really flavorful. If you’re new to poke cake recipes, this is a great one to choose.

Ingredients
  

  • 1 box white cake mix and the ingredients listed on the box

For the Filling:

  • ¾ cup heavy whipping cream
  • 14 ounces sweetened condensed milk
  • Zest from 1 lime
  • ½ cup key lime juice

For the Topping:

  • ½ cup powdered sugar
  • cups heavy whipping cream
  • 1 teaspoon vanilla

Instructions
 

  • Make the cake, following the directions on the package.
  • Let it cool for about 5 minutes.
  • Poke holes all over it with a chopstick or wooden spoon handle.
  • Whisk the cream, milk and lime zest for the filling, then mix in the lime juice.
  • Pour the lime mixture all over the cake, using a spatula to get it in every hole.
  • Chill overnight if possible or for at least 1 hour.
  • Beat the cream and vanilla until thick.
  • Mix in the powdered sugar and whisk until it makes stiff peaks.
  • Spread the topping over the poke cake and add lime slices to garnish if liked.
