This Cheesy Enchilada Meatballs Recipe is a real crowd-pleaser - and for good reason! Not only do they taste amazing, they're also incredibly easy to make.

Ingredients
  

For the meatballs:

  • 2 Tbsp. Taco seasoning
  • 1 lb. Ground beef
  • ½ tsp. Onion powder
  • 1 Large egg
  • ½ tsp. Salt
  • ¼ C. Shredded cheddar cheese
  • ¼ tsp. Black pepper

For the casserole:

  • ¾ C. Shredded Mexican blend cheese
  • The cooked meatballs above
  • 10 oz. Can Red enchilada sauce

Instructions
 

  • Heat the oven to 400 degrees.
  • Knead together all of the ingredients for the meatballs in a large mixing bowl until well combined.
  • Form the mixture into evenly sized meatballs, and place onto a parchment lined baking sheet.
  • Baked for 25 minutes
  • Reduce the oven temperature to 350 degrees.
  • Spread ¼ of the enchilada sauce over the bottom of an oven-proof skillet.
  • Add the meatballs to the skillet, and top with the remaining enchilada sauce.
  • Sprinkle with the Mexican blend cheese.
  • Bake for 15 minutes.
