Filet Mignon Recipe in Mushroom Sauce

Ingredients
  

  • 24 oz. Filet mignon cut into 4 portions
  • ½ C. Heavy whipping cream
  • 4 tsp. Minced garlic
  • 16 oz. Mushrooms sliced
  • 1 Onion chopped
  • ½ C. Merlot wine
  • 1 ½ C. Beef broth
  • 4 Tbsp. Butter divided
  • 1 Tbsp. Fresh thyme
  • ½ tsp. Black pepper
  • 2 Tbsp. Olive oil divided
  • 1 ¼ tsp. Salt

Instructions
 

  • Add 1 Tbsp of oil and 2 Tbsp of butter to a skillet over medium heat on the stove.
  • Mix in the mushrooms and onions., and saute until softened.
  • Stir in the garlic, and saute another 30 seconds.
  • Add in the fresh thyme, and salt and pepper to taste.
  • Remove from the skillet, and set aside.
  • To the same skillet, add 2 Tbsp of butter.
  • Season the steaks on both sides with salt and pepper to taste.
  • Sear the steaks in the melted butter over medium-high heat until done to your liking. Remove, and let rest.
  • To the skillet, add the red wine, and simmer over medium heat until the liquid is reduced by half.
  • Pour in the cream as well as salt and pepper to taste. Simmer until the sauce thickens.
  • Return the vegetables and steaks to the skillet and serve.
