Seafood Loaded Potato Pan

Ingredients
  

  • 1 1 ⁄2 lb. peeled and deveined fresh shrimp 1 1⁄2 lb sliced pieces of smoked sausage 1 1⁄2 lb cut quarters of red potatoes
  • 1 ⁄2 large yellow onion cut into wedges
  • 1 ⁄2 cup Crawfish boil seasoning
  • 2 Tbsp Cajun Spice
  • 1 Tbsp Garlic Powder

Sauce:

  • 1 can Cream of Mushroom Soup
  • 1 cup cubed pieces of Velveeta cheese 1⁄3 cup Skim milk
  • 2 fresh diced Roma tomatoes

Instructions
 

  • Preheat oven to 400 degrees
  • Prep large baking dish with nonstick baking spray.
  • Whisk to combine the Crawfish boil seasoning, cajun spice, and garlic powder in a bowl. Put red potatoes and sliced onions in the prepared baking dish.
  • Season with 1⁄2 of the spice mix.
  • Bake at 400 degrees for 15 minutes.
  • Remove from oven.
  • Add the shrimp and sausage.
  • Season with the remaining 1⁄2 cup of spice mix.
  • Mix to combine.
  • Return to the oven at 400 degrees for 10 minutes.

Sauce Directions:

  • Add the mushroom soup, Velveeta cheese, and milk in a pot over medium heat. Whisk to combine.
  • Cook until the cheese has completely melted.
  • Stir in the diced Roma tomatoes.
  • Stir until combined.

Mixing all together

  • Pour sauce and toss to combine.
  • Return to oven to bake for an additional 15 minutes.
  • Garnish with chopped parsley.
