The Best Goulash

A hearty bowl of beef, noodles, and lastly; vegetables for an outstanding comfort meal.

Ingredients
  

  • 1 lb. Ground beef
  • 1 C. Uncooked elbow macaroni
  • 1 Onion chopped
  • 28 oz. Diced tomatoes undrained
  • C. Frozen corn
  • 8 oz. Tomato sauce
  • 4 oz. Can diced green chilis
  • ½ tsp. Cumin
  • ¼ tsp. Salt
  • ½ tsp. Black pepper
  • ¼ C. Chopped fresh cilantro

Instructions
 

  • Boil the macaroni until it is done to your liking, rinse in cold water, and drain.
  • Add the ground beef and onion to a skillet over medium-high heat on the stove, and cook until the meat is browned and onions have softened. Drain any excess grease.
  • Reduce the heat to medium and add in the diced tomatoes, frozen corn, tomato sauce, green chilis, salt and pepper, and cumin. Stir to combine.
  • Bring the mixture to a boil and then reduce the heat to a simmer for 10 minutes.
  • Stir in the macaroni and cilantro, and stir to combine before serving.
