Hot Chocolate Melty Marshmallow Waffles
Sometimes, the slightest change in the usual routine adds enough va-va-voom to turn an ordinary morning into extraordinary. Substituting a half-cup of cocoa powder for some of the flour in your favorite waffle recipe is a surefire way to turn your day into delicious. Here's our favorite recipe for whole wheat waffles. This morning we decided to grind our own wheat and oat flour in our Vitamix, but you can use whole wheat flour only if you don't have a bag of Coach's Oats and Vitamix for grinding. This recipe is simple and splendid. The steaming hot Vanilla Bean Creme Syrup melts the marshmallows and chocolate chips until this pretty-danges-healthy breakfast option turns into a hot-cocoa inspired treat.
Ingredients
FOR THE HOT CHOCOLATE WAFFLES:
- 3/4 cups white whole wheat flour
- 3/4 cup oat flour
- 1/2 cup cocoa powder
- 2 tablespoons sugar
- 2 eggs
- 3 tablespoons butter melted
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- pinch salt
- 1- 1 1/2 cups milk
FOR THE VANILLA BEAN CREME SYRUP:
- 3 tablespoons butter
- 1 cup half-and-half
- 2 cups sugar
- seeds scraped from 1/2 vanilla pod or 2 teaspoons vanilla extract
FOR THE TOPPINGS:
- 1 1/2 cup mini marshmallows
- 1/2 cup jumbo chocolate chips
Instructions
FOR THE HOT CHOCOLATE WAFFLES:
- In a large bowl, beat together all ingredients for the waffles until smooth.
- Add enough milk to make the batter fairly thin, but not super runny. It shouldn't be thick and bloppy.
- Spoon into a hot waffle iron & bake according to mannufacturer instructions.
FOR THE VANILLA BEAN CREME SYRUP:
- In a large saucepan, combine all ingredients.
- Heat over medium high heat, stirring constantly until steaming hot.
- Spoon over fresh waffles, topped with mini marshmallows and chocolate chips.
- The syrup should be hot enough to melt the marshmallows & chocolate chips, so shy away from having it pretty danged steamy.
