Ingredients
  

  • 1 lb. Lean Ground Turkey
  • 1 Small Yellow Onion Chopped
  • 1 tsp Garlic Minced
  • 1 16 Oz Can Tomato Sauce
  • 1 16 Oz Can Fire Roasted Tomatoes (Drained)
  • 2 tsp Olive Oil
  • 1 Bag 12 Oz Rotini Pasta (Low Carb)
  • 1 tsp Italian Seasoning
  • 1 cup Mozzarella Shredded Cheese Non-Fat
  • 1 cup Mozzarella Shredded Cheese Reduced-Fat
  • 1 Small Package Of Turkey Pepperoni 32 Slices

Instructions
 

  • Preheat oven to 350 degrees. Prep a 9 x 13 inch baking dish with nonfat baking spray.
  • Cook the pasta following the directions on the package until it is al dente. Drain the pasta and set it aside.
  • Add the ground turkey, onion, and garlicin a large skillet with olive oil over medium-high heat.
  • Continue to cook until the meat is browned. Drain as needed. Reduce the heat to low.
  • Stir in the tomato sauce, fire roasted tomatoes, and seasoning.
  • Transfer this in a large bowl. Stir in one cup of shredded cheese and 16 pieces of turkey pepperoni.
  • Scoop this into the prepared baking dish.
  • Sprinkle the rest of the shredded cheese and place the other 16 slices of pepperoni on top.
  • Loosely cover the baking dish with foil. Bake at 350 degrees for 20 minutes.
  • Take out of the oven and remove the foil.
  • Return to the oven and bake for an additional 10 minutes. Serve.
