Ingredients:
1 lb. Lean Ground Turkey
1 Small Yellow Onion (Chopped)
1 tsp Garlic (Minced)
1 (16 Oz) Can Tomato Sauce
1 (16 Oz) Can Fire Roasted Tomatoes (Drained)
2 tsp Olive Oil
1 Bag ( 12 Oz) Rotini Pasta (Low Carb)
1 tsp Italian Seasoning
1 cup Mozzarella Shredded Cheese (Non-Fat)
1 cup Mozzarella Shredded Cheese (Reduced-Fat)
1 Small Package Of Turkey Pepperoni (32 Slices)
Directions:
Step 1. Preheat oven to 350 degrees. Prep a 9 x 13 inch baking dish with nonfat baking spray.
Step 2. Cook the pasta following the directions on the package until it is al dente. Drain the pasta and set it aside.
Step 3. Add the ground turkey, onion, and garlicin a large skillet with olive oil over medium-high heat.
Step 4. Continue to cook until the meat is browned. Drain as needed. Reduce the heat to low.
Step 5. Stir in the tomato sauce, fire roasted tomatoes, and seasoning.
Step 6. Transfer this in a large bowl. Stir in one cup of shredded cheese and 16 pieces of turkey pepperoni.
Step 7. Scoop this into the prepared baking dish.
Step 8. Sprinkle the rest of the shredded cheese and place the other 16 slices of pepperoni on top.
Step 9. Loosely cover the baking dish with foil. Bake at 350 degrees for 20 minutes.
Step 10. Take out of the oven and remove the foil.
Step 11. Return to the oven and bake for an additional 10 minutes. Serve.
