Prep a large skillet with nonstick cooking spray.
Heat the skillet over medium heat.
Add the diced chicken. Stir until the chicken is lightly goldened.
Put the cooked chicken on a plate. Add the olive oil.
When the oil gets hot add the onions, broccoli, zucchini, the pepper, and the water.
Saute’ until the broccoli is soft.
While the broccoli is cooking, make the sauce, Add soy sauce, Hoisin sauce, rice vinegar, olive oil, brown sugar and red pepper flakes.
Whisk to combine the sauce ingredients together.
Add the chicken and sauce into the skillet.
Continue to stir for two minutes or until everything is heated.
Stir well to mix all ingredients.
Serve.
