Ingredients
  

  • 3 large Zucchinis
  • ½ tsp. Garlic Powder
  • ½ tsp. Italian Seasoning
  • 1 tbsp. Olive Oil
  • 1 lb. Ground Beef
  • 1 large Egg
  • 2 tsp. Garlic Minced
  • ¼ tsp. Parsley Chopped
  • 1 tbsp. Olive Oil
  • 2 cups. Marinara Sauce
  • 1 cup. Mozzarella Cheese Shredded
  • ½ cup. Grated Parmesan Cheese
  • Salt And Pepper To Taste

Instructions
 

  • Preheat the oven to 350 degrees.
  • Cut the zucchinis in half lengthwise, and remove the seeds and flesh from the center of each one, to hollow them out like a boat.
  • Coat the zucchini in 1 tbsp of olive oil, the garlic powder, Italian seasoning and salt and pepper to taste.
  • Place the zucchini in a 9x13 baking dish, and bake for 12 minutes.
  • While the zucchini is baking, mix together the ground beef, minced garlic, egg, parsley and salt and pepper to taste in a bowl. Knead with your hands to combine.
  • Form the meat mixture into 20-24 evenly sized meatballs. Heat 1 tbsp olive oil in a skillet over medium-high heat.
  • Brown the meatballs on both sides for 2 minutes each side. Reduce the heat to medium and add in the marinara sauce.
  • Simmer the meatballs in the sauce for 10 minutes. Fill the zucchini boats with the meatballs and sauce.
  • Top with the mozzarella cheese. Turn the oven to broil, and cook the boats until the cheese has melted.
  • Top with the parmesan cheese before serving.
