Ingredients
  

  • 3 Tbsp. Olive oil Divided
  • 4 Boneless pork Chops
  • 1 tsp. Worcestershire sauce
  • ¼ tsp. Cayenne pepper
  • 3 tsp. Garlic Minced
  • ½ tsp. Cumin
  • Salt and pepper to taste
  • 2 lbs. Multi Colored potatoes cut into halves
  • 1 Red onion cut into large chunks
  • ½ tsp. Paprika
  • ½ tsp. Rosemary

Instructions
 

  • Heat the oven to 400 degrees.
  • In a mixing bowl, toss the pork chops with 1 tbsp of the olive oil, the cayenne pepper, cumin, worcestershire sauce, garlic and salt and pepper to taste. Place the pork in a single layer on a parchment lined baking sheet.
  • Add the potatoes and onion to a large mixing bowl and toss with the remaining olive oil, rosemary, paprika and salt and pepper to taste.
  • Spread the potatoes and onion next to the pork on the baking sheet.
  • Bake for 20-25 minutes until the potatoes are tender and the meat is cooked through.
