Raspberry Roasted Garlic Grilled Chicken

RASPBERRY & ROASTED GARLIC GRILLED CHICKEN

You deserve to take a night off. Tonight is not a night to be all fussy and hot in the kitchen. No. The final moments of summer are sweeping through the landscape and you deserve to bask in them, to taste them, to eat them up.

Which is what we did tonight with this brilliantly simple and utterly declicious Roasted Garlic & Raspberry grilled chicken. I threw together a super-snappy marinade this morning, let it sit on the meat for most of the day (in the fridgidaire, of course), then tossed those hunky little suckers on the grill tonight. Served over a bed of greens, with a drizzle of the leftover sauce and a few fresh raspberries, and you’ve fed your belly well without lifting so much as a finger.

Which is another reason you deserve to take a night off. Anyone that smart ought to have a few minutes to bask in the waning summer sun, as well as their uncanny cleverness. Yay you!

RASPBERRY & ROASTED GARLIC GRILLED CHICKEN

Raspberry & Roasted Garlic Grilled Chicken

Light and fresh, this simple marinade works beautifully as a salad dressing, too. As a marinade, it’s delicious on chicken breast, but utterly divine on the dark meat of thighs. The meat cooks up deliciously flavored, with the sweet, rich tang of citrus and raspberry, and the earthy flavor of garlic. Set a bit of the marinade aside for drizzling over greens and rice.

2 lemons, freshly squeezed

1 orange, freshly squeezed
1/4 c. fresh raspberries
1/2 T. horseradish mustard
1/2 T. worchestershire sauce
4 cloves roasted garlic
1/4 c. honey
1/4 c. oil
1/2 T. salt

Combine all ingredients in a blender until very well blended. Drizzle over 1-3 pounds of uncooked chicken, cover, and refrigerate until ready to grill (up to 12 hours).
