One Pan Oven Roasted Potatoes, Sausage, and Peppers

Welcome to a brand new recipe friends! We have a versatile dish today that could be paired with a main dish or be the highlight of your table. To make it even better, this entire recipe is cooked together in one pan so each ingredient cooks in its own juices for a more tender and flavorful meal. 

One Pan Oven Roasted Potatoes, Sausage, and Peppers is a busy parents’ dream meal. Just imagine having to work late and then being stuck in traffic while you still have to pick up the kids and run errands; what will you all have for dinner? Don’t panic and drive straight to the closest fast-food restaurant! Take a deep breath, and just grab this recipe out of your index and have a full meal ready in under an hour.

It really is that simple; however, don’t let the simplicity fool you. The flavor is outstanding! Even with just a few seasonings of thyme, paprika, salt, and pepper; you get a robust flavor that works perfectly with the flavors of the other ingredients. 

Smoked sausage brings a level of smoky flavor like you just took the sausage off the grill and the thyme is super aromatic with the onion, potatoes, and peppers.

Can I use other spices to add more spices?

If you have a more adventurous palette and want to try something with a little more heat; then you can use smoked paprika to combine with the sausage flavor. A splash of cayenne pepper will really get you warmed up from the inside out. Just make sure to not overdo it because then it will drown out the natural flavors released from the onion and peppers. 

What other vegetables could I substitute for this meal?

Make sure whatever vegetables you decide to use are hearty enough to hold up in the oven with the other ingredients. We would recommend celery, carrots, or a tiny bit of jalapenos for a spicer taste. 

Here are all the ingredients you need to create this simple meal.

1 lb. Smoked sausage sliced into rounds

1 Onion Chopped into larger wedges

5 Potatoes chopped into chunks

5 Large Multi-Colored Peppers chopped into chunks

Olive oil

Paprika, thyme, Salt, and pepper to taste

Let’s jump right into baking your family’s dinner!

Preheat the oven to 400 degrees.

Line a baking sheet with aluminum foil.

Place the onion, potato, peppers, and sausage on the baking sheet.

Drizzle the mixture with olive oil and season with thyme, paprika, salt, and pepper to taste. Toss to coat.

Bake for 45-50 minutes until done to your liking.
