Ground beef
Zucchini
Rotel
Minced garlic
Chili powder
Cumin
Paprika
Oregano
Salt and pepper to taste
How to make Mexican Zucchini and Beef:
Step 1. Cook the beef in a skillet over medium high heat until it is browned completely.
Step 2. Add in the minced garlic, stir, and cook for an additional 30 seconds.
Step 3. Reduce the heat to medium low and add in the chili powder, cumin, paprika, oregano and salt and pepper to taste. Stir to combine.

Step 4. Pour the Rotel into the skillet, stir, and cover. Cook for 10 minutes.
Step 5. Add the zucchini to the skillet.
Step 6. Cover and cook for an additional 10 minutes before serving.
