Ham and Cheese Egg Roll-Ups are a low carb breakfast burrito alternative that can be whipped up in just a few minutes and even prepped ahead!
We all know breakfast is the most important meal of the day and while I try to make healthy breakfasts that everyone loves and keep us all full through lunch, sometimes it’s just easier to “cheat” and let the kids grab some cereal or indulge myself in a muffin or dessert-like breakfast.
I’m trying to change that habit and make sure we all start the day with a healthy, low carb and high protein breakfast that keeps us satisfied until lunch. These Ham and Egg Roll-Ups are one of those breakfasts.
Ham Egg and Cheese Roll-Ups are essentially a breakfast burrito or breakfast taco. The ham just takes the place of the tortilla while the inside can be your favorite burrito ingredients.
I kept it simple and went with ham, egg, cheese and some veggies for these breakfast roll-ups. Each ham roll-up is filled with scrambled egg, cheese and veggies.
For a kid-friendly breakfast I will sometimes omit the veggies.
These Ham and Cheese Egg Roll-Ups require just 10 minutes of prep – you prepare the eggs to your liking as usual, fill each piece of ham with the egg and cheese mixture, roll and place in a baking dish. Broil for a few minutes and you have a high protein, easy breakfast.
When making these breakfast roll-ups, you want to make sure you’re using the thicker slices of ham. The thin slices won’t hold the filling and will fall apart.
We enjoy dipping this Ham and Egg Roll-Ups in salsa. You can also top the ham with some additional cheese.
Ham Egg and Cheese Roll-Ups can be prepped ahead of time. You can store the leftovers in the fridge and pop them in the microwave when you’re short on time or reheat in the oven to keep the crunchy texture.
I feel like I won the lottery with this breakfast because it’s SO easy and the entire family loves it. Sometimes we even eat this ham and cheese egg roll-ups as brunch or dinner!
How To Make Ham and Egg Roll-Ups
Step 1. Turn on oven to broil setting
Step 2. Heat olive oil over medium-high heat.
Step 3. Add in peppers and onions. Cook until soft.
Step 4. Add in beaten eggs, salt, and pepper to taste.
Step 5. When eggs are cooked to your liking, mix in shredded cheese and remove from heat.
Step 6. Lay ham on a flat surface. Add a spoonful of filling to the center of each.
Step 7. Roll and place in baking dish face down.
Step 8. Cook in the broiler for 3-5 minutes.

What variations can I make to these Ham Egg and Cheese Roll-Ups?
You can use this recipe as a start point for a variety of breakfast roll-ups. Play around with the filling. You could use just egg whites instead of the whole eggs, add or omit the veggies, scramble in some bacon or sausage pieces, etc. I like to make these with egg whites and spinach. My kids prefer just eggs and extra cheese.
How should I serve these breakfast roll-ups?
These are a great grab and go breakfast. Honestly, I’m guilty of eating them standing up in the kitchen or on the way out the door. My kids like to dip them in salsa or ketchup.
Can I store and reheat these Ham and Egg Roll-Ups?
Yes! Sometimes I like to prepare these the night before – I follow all of the steps listed above, except for the baking, and leave the pan in the fridge so in the morning I just need to pop it in the oven for a few minutes. If you have leftovers, you can store them in the fridge for a few days. You can reheat in the microwave in a hurry or reheat in the oven for better texture.

Ham and Egg Roll Ups
Ingredients
- ¼ c Chopped onions
- ½ c Chopped bell pepper
- 3 Eggs
- ½ c Shredded cheddar cheese
- 6 Large thick slices of deli ham
- 1 tbsp Olive oil
- Salt and pepper to taste
Instructions
- Heat the oven on the broil setting.
- Place 1 tbsp of olive oil in a skillet over medium-high heat on the stove.
- Add the chopped onion and pepper to the skillet. Cook for 2-3 minutes until beginning to soften.
- Add in the beaten eggs as well as salt and pepper to taste. Cook until the eggs are done to your liking.
- Mix in the shredded cheese, and remove the egg mixture from the heat.
- Lay the pieces of ham on a flat surface. Fill the center of each one with the egg mixture, and roll each piece up.
- Place the ham and egg roll ups face down in a baking dish.
- Cook under the broiler for 3-5 minutes until the brown and crispy up a bit on the edges.
