Grown Up Macaroni & Cheese

Grown Up Macaroni & Cheese
While my kids could eat boxed mac & cheese from here until eternity, I sometimes want a bowl of grown-up comfort food fit for my own cheese-adoring palate. This recipe calls for a few specialty ingredients (Hello smoked gouda. How are you gorgonzola cheese.) but it is well worth the trip to the grocery store. This is such a creamy, decadant tasting side dish. The bite of garlic, the sweetness of diced pear, the bacon & gorgonzola topping. Being a grown up is so divine.
6 cups cooked macaroni
1 clove garlic, crushed
1/2 cup cream cheese, cut into small pieces
1/4 cup milk
1 cup sharp white cheddar
1 cup smoked gouda
1 pear, diced
salt & pepper
2 tablespoons butter, melted
1/4 cup gorgonzola cheese
1/2 cup crushed CLUB crackers
2 slices bacon, cooked & crumbled
In a large bowl, stir together the macaroni, garlic, cream cheese, milk, cheddar, gouda, and diced pear. Salt & pepper to taste. Spoon into small ramekins or a medium baking dish. In a small bowl, stir together the butter, gorgonzola cheese, crackers, and bacon. Sprinkle the cracker topping over the pasta mixture. Bake in an oven preheated to 400 degrees for 10-15 minutes, or until the topping is golden brown.
