Creamy Potato & Hamburger Soup

If you can’t decide between making hamburgers and making soup, then this is the recipe for you. You will enjoy the best of both worlds in this simple hamburger soup recipe with potatoes.

It’s a cozy, comfort food-style recipe which boasts a meaty flavor from the ground beef, along with potatoes and vegetables, plenty of cheese, and a variety of herbs and seasonings to showcase the meaty taste.

Soups aren’t just for the colder months. In fact, any time you are in the mood for something hearty and comforting, this hamburger and potato soup ticks all the boxes. It’s also versatile and highly tweak-able.

Ingredients:

  • Ground beef or pork
  • Russet potatoes
  • Milk
  • White onion
  • Garlic clove
  • Frozen mixed vegetables
  • Velveeta cheese, in cubes
  • Chicken broth
  • Dried parsley flakes
  • Dried basil
  • Cornstarch

How to make Creamy Potato & Hamburger Soup:

Step 1. Cook the beef and onion in a skillet until the beef is browned and the onion is tender.

Step 2. Drain off and discard any grease, then transfer the beef mixture into a crockpot.

Step 3. Fry the garlic in the same skillet until golden and then stir this into the beef mixture.

Step 4. Also add the potatoes, vegetables, broth, parsley, and basil.

Step 5. Cook for 4 hours on high or 8 hours on low.

Step 6. If you don’t have a crockpot, you can also simmer this on the stove in a large pot with a lid until the potatoes are tender.

Step 7. Whisk the milk and cornstarch together, then stir this into the soup along with the Velveeta.

Step 8. Cover and cook until the Velveeta has melted, then serve the soup hot, perhaps with some warm crusty bread on the side.

Can You Make It Ahead?

The soup can be made a day or two in advance and then warmed back up gently on the stove.

Storage Instructions:

Leftovers will be fine for up to 4 days if kept in an airtight container in the refrigerator. This soup can also be frozen for up to 6 months and then thawed overnight in the fridge.

Variations and Substitutes:

You can use any kind of ground meat in here, or even omit it and add extra vegetables to keep it vegetarian. You might also want to add some hot sauce or cayenne chili powder if you want to add a spicy  kick.
