Cheesy Hamburger Potato Casserole

This delicious combination of beef, onion, potatoes, and cheese is not only extremely tasty but it’s easy to make. Along with the cooking time, you just need 15 minutes to assemble it, making it a great candidate for a busy weeknight supper. Make any changes you want, such as using pork instead of beef, or adding some extra veggies in there, such as peas or carrots. Corn would work too.

It’s a family-friendly recipe which everyone is going to love. Make a batch if you want because it keeps for a few days and will also freeze for months, if you want to freeze it in individual portions. This casserole is meaty, tasty and satisfying. Ingredients:

• Potatoes
• Ground beef
• Evaporated milk
• Cheese soup
• Whole milk
• Yellow onion
• Shredded cheddar
• Salt
• Black pepper

How to make Cheesy Hamburger Potato Casserole:

Preheat the oven to 350°F and grease a 13×9-inch baking dish.

Sauté the meat and onion in a skillet until the meat is cooked through.

Meanwhile, peel the potatoes and cut them into ¼-inch slices.

Arrange a layer of potatoes on the bottom of the prepared baking dish.

Grind some salt and pepper over them.

Add about a third of the beef mixture and spread it evenly over the potato layer.

Add a third of the cheese, then repeat these layers again twice, ending with a cheese layer.

Stir both milks with the soup and add salt and black pepper if needed.

Pour this mixture over the top of the casserole.

Cover with foil and bake for an hour.

Discard the foil and give it another 15 minutes in the oven to brown the cheese.

Serve hot.

  • 12 ounces evaporated milk
  • 14- ounce can cheese soup
  • ½ cup whole milk
  • 1 diced yellow onion
  • 8 ounces shredded cheddar
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Can You Make It Ahead?

Yes you can assemble it ahead and keep it refrigerated, then cook it when you’re ready.

Storage Instructions:

Leftovers will keep for up to 4 days in a sealed container (or the dish you make it in covered with foil) in the fridge.

Variations and Substitutions:

If you don’t have evaporated milk you can sub whole milk instead. You can also make the potato slices thicker, as long as you allow more cooking time. You can also add some peas and carrots to the casserole for extra nutrients.
