1 Cucumber
1 Carrot
3-4 Radishes
2 tablespoons Cilantro (Chopped)
2 tablespoons Olive Oil
Salt and Pepper (To Taste)
1 tablespoon Lime Juice (Optional)
Directions:
Step 1. Using a mandolin or a sharp kitchen knife, slice the cucumber, carrot, and radishes into thin slices.

Step 2. Place in a bowl and add the chopped ciltantro.
Step 3. Add the oil and salt and pepper to taste. Toss the salad until well coated.
Step 4. Add in the lime juice, as desired.
