Magic Lemon Pie

Prep Time: 20 minutes | Baking Time: 10 minutes | Total Time: 30 minutes | Makes: 8 servings

Ingredients for the Crust:

1 (9 Inch Prepared Graham Cracker Crust

Filling:

½ cup Fresh Lemon Juice

1 can Sweetened Condensed Milk

2 Egg Yolks

Meringue:

2 Egg Whites (Room Temperature)

¼ tsp Cream Of Tartar

4 tbsp Granulated Sugar

Directions for the Crust:

Step 1. Unwrap graham cracker crust. Set aside.

Directions for the Filling:

Step 2. Add sweetened condensed milk and two egg yolks together in a mixing bowl.

Step 3. With an electric mixer mix the milk and egg yolks together,

Step 4. Slowly add the lemon juice, beating until the mixture thickens.

Step 5. Pour into the graham cracker crust.

Directions for the Meringue:

Step 6. Add the two egg whites and cream of tartar to a mixing bowl.

Step 7. Use an electric mixer to beat until it is foamy. Slowly beat in the sugar.

Step 8. Continue to beat until the mixture becomes stiff.

Step 9. With an offset spatula, even the meringue on top.

Step 10. Check to make sure that the meringue is touching the crust to seal the edges of the pie.

Directions to Bake:

Step 1. Bake at 400 degrees for six plus minutes until the meringue starts to brown.

Step 2. Allow the pie to cool. Place in the refrigerator to store.
