Southern Sweet Onion Casserole

Rich, creamy and crunchy, this sweet onion side dish is a winning recipe idea. It’s super-easy to make and it will bake happily in the oven while you work on the rest of the meal.

Ingredients
  

  • 1 C. Ritz crackers crushed
  • 4 Sweet onions sliced
  • 1 ½ C. Shredded cheddar cheese
  • 2 Tbsp. Butter
  • 1 tsp. Salt
  • 3 Large eggs
  • ¼ tsp. Pepper
  • 5 oz. Can evaporated milk
For the topping:
  • 3 Tbsp. Melted butter
  • 1 C. Ritz crackers crushed into crumbs

Method
 

  1. Heat the oven to 375 degrees.
  2. Add the onions to a pot, and cover in water.
  3. Bring the water to a boil, and simmer the onions until softened, about 8 minutes.
  4. Drain the onions and stir in the butter while they are still hot.
  5. Beat the eggs in a large mixing bowl.
  6. Add the onions, milk, cheese, Ritz crackers and salt and pepper to taste to the bowl with the eggs, and stir to combine well.
  7. Spread the mixture into a well greased 9x13 baking dish.
  8. In a bowl, stir together the topping ingredients, and sprinkle over the casserole.
  9. Bake for 45 minutes, and allow to cool for 5 minutes before serving.
