Ingredients
  

  • 1 Onion chopped
  • 2 lbs. Fresh green beans trimmed
  • 5 Potatoes peeled and diced
  • 1 lb. Smoked turkey legs
  • Salt and pepper to taste
  • 3 tsp. Minced garlic

Method
 

  1. Add the turkey legs to a pot of boiling water, and boil low until the meat is tender and falls from the bone.
  2. Remove the meat, dice and set aside.
  3. Place the green beans, onions, garlic and reserved turkey meat into the pot with the turkey broth in it.
  4. Simmer for 10 minutes, and then stir in the potatoes.
  5. Continue to simmer until the potatoes are tender.
