Ingredients
  

  • 2 c. Almond flour
  • 2 tsp. Baking powder
  • 1 tsp. Cinnamon
  • 1 tsp. Pumpkin pie spice
  • 6 Eggs beaten
  • 8 tbsp. Melted butter
  • c. Erythritol
  • ½ c. Pumpkin puree
  • 3 tbsp. Sour cream
  • 1 tsp. Vanilla
  • 2 tbsp. Heavy whipping cream

Method
 

  1. Preheat the oven to 350 degrees.
  2. In a mixing bowl, add 6 beaten eggs and 8 tablespoons of melted butter. Allow the melted butter to cool a bit before adding it to the eggs, to avoid cooking them. Mix together the eggs and butter until smooth and creamy.
  3. Add the erythritol to the egg mixture and beat until smooth.
  4. Mix in the pumpkin puree, sour cream, heavy whipping cream and vanilla extract. Stir until combined well.
  5. In a separate mixing bowl, combine the almond flour, baking powder, pumpkin pie spice and cinnamon. Mix until well incorporated.
  6. Add the dry ingredients to the wet ones, and beat together until smooth.
  7. Pour the batter into a well greased loaf pan.
  8. Bake in the oven for 1 hour or until the top is browned and a knife comes out clean when inserted into the center of the bread.
