Pecan Cheesecake Pie

Everyone loves cheesecake and everyone also loves pecan pie, so which are you going to make? Well, here’s a great idea - why not make a cross between the two! You’ll already have most of the ingredients in the pantry and refrigerator. Along with an unbaked pie crust (or you can make your own if you want) you will need cream cheese, pecans, sugar, eggs, corn syrup, and vanilla extract. With just those ingredients you can make the most mouthwatering pie which everyone will love.

Ingredients
  

  • 1 unbaked pie shell
  • 1 tub cream cheese at room temperature
  • 1 cup chopped pecans
  • ¼ cup brown sugar
  • ¼ cup white sugar
  • 4 eggs
  • 1 cup light corn syrup
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat the oven to 425°F.
  2. Beat 1 of the eggs with the cream cheese, white sugar, and vanilla extract.
  3. Spread this mixture evenly in an unbaked pie crust.
  4. Sprinkle the nuts on top.
  5. Next, beat the rest of the eggs with the brown sugar and corn syrup.
  6. Pour this mixture over the nuts in the pie crust.
  7. Bake for 10 minutes.
  8. Turn the heat down to 375°F and bake for another 25 minute or until set.
  9. Cool the pie on a wire rack, then cut into slices to serve.
