Method
- Place the grated potatoes into a flour sack towel, and wring out as well as you can to remove as much water as possible.
- Mix together the onion, eggs, salt, flour and potatoes in a bowl until well combined.
- Heat a layer of oil in a skillet over medium high heat, and drop the mixture by the ½ cup into the heated oil.
- Fry evenly on both sides until browned and crispy.
- Drain on a paper towel lined plate before serving.
