Fried Rice with Shrimp

Ingredients
  

  • 1 lb. Shrimp
  • 3 cup Cooked Rice
  • 2 tbsp. Olive Oil
  • 2 tsp. Garlic Minced
  • 3 tbsp. Soy Sauce
  • 1 ¼ cups Frozen Mixed Vegetables
  • ¼ cup Green Onion Chopped
  • 2 tsp. Sesame Oil
  • 1 Large Egg Beaten Lightly

Method
 

  1. Heat the oil in a skillet over medium high heat.
  2. Add the vegetables, and saute for 3 minutes.
  3. Stir in the shrimp, and cook for several minutes until cooked through.
  4. Add the garlic, and saute for 30 seconds.
  5. Mix in the rice, soy sauce and sesame oil, and saute for 3-4 more minutes.
  6. Scoot the rice mixture off to one side of the skillet, and add the egg to the other side. Scramble the egg, and then mix it into the rice mixture.
  7. Garnish with green onions and serve.
