Egg Roll in a Bowl

This reduced carb alternative to classic egg rolls delivers all the wonderful Chinese flavor. It’s really good - much better than takeout!

Ingredients
  

  • pounds ground beef
  • 1- pound bag of coleslaw mix carrot and cabbage
  • 2 tablespoons sesame oil
  • 2 teaspoons ginger paste
  • ½ cup chopped yellow onion
  • cup soy sauce
  • 2 minced garlic cloves
  • Chopped green onion for garnish

Method
 

  1. Heat half the oil in a skillet or large pot and heat over a moderate heat.
  2. Add the meat and onion and cook until there isn’t much pink left in the meat.
  3. Add the coleslaw mix and onion.
  4. Keep cooking for about 10 minutes.
  5. Mix the soy sauce, garlic, ginger and remaining oil in a bowl, then add to the skillet.
  6. Continue to cook, stirring, until the vegetables are tender.
  7. Add more soy sauce if needed.
  8. Serve garnished with green onions.
