Ingredients
  

  • 3 Small Avocados Diced
  • 12 Oz. Cherry Tomatoes Halved
  • 2 English Cucumbers Diced
  • 2 tbsp. Lemon Juice
  • ΒΌ cup Parsley Chopped
  • 2 tbsp. Olive Oil
  • Salt And Pepper To Taste

Method
 

  1. Place the chopped avocados in a bowl.
  2. Add in the diced cucumber and sliced tomatoes, and stir to combine.
  3. Mix in the lemon juice, parsley and 2 Tbsp of olive oil.
  4. Season with salt and pepper to taste.
  5. Toss well to combine before serving.
