Method
- Preheat the oven to 350°F.
- Mix the dry ingredients in one bowl and the eggnog, egg, oil, applesauce, and rum extract (if using) in another.
- Now combine both mixtures.
- Stir in the nuts and raisins.
- Divide this batter between a pair of greased loaf pans.
- Bake the eggnog bread for 40 minutes or until a toothpick inserted into the middle of a loaf comes out clean.
- Let the loaves cool for 10 minutes, then turn out of the pans and let them finish cooling on a wire rack.
