Chocolate Rice Krispies Balls

Rice Krispie cakes and Rice Krispie balls are easy to make and you can even buy them from bakeries now. But unless you want to spend several dollars on just one of these tasty bites, it’s best to make your own from scratch. That way you know exactly what’s gone into them and you’re going to love their wonderful flavor and chewy texture.

Ingredients
  

  • 1 C. Rice Krispies
  • ½ C. Peanut butter
  • ½ C. Pecans chopped
  • 3 Tbsp. Butter softened
  • 1 C. Shredded coconut
  • 1 tsp. Vanilla
  • 1 Package chocolate chips
  • 1 Square of sweet chocolate

Method
 

  1. In a large mixing bowl, combine the rice krispies, peanut butter, pecans, butter, shredded coconut and vanilla.
  2. Chill for 1 hour.
  3. Form the mixture into evenly sized balls, and freeze for 4 hours.
  4. Combine the chocolate chips and sweet chocolate square in a bowl that is microwave safe.
  5. Heat for 30 seconds at a time until smooth.
  6. Dip the balls into the melted chocolate, and place onto a parchment lined baking sheet to set.
  7. Allow the chocolate to set before serving.
