Christmas Eggnog Bread
This holiday bread is moist and tasty. It has pecans and golden raisins, along with eggnog and applesauce. It’s a tasty sweet bread which is ideal for Christmas breakfast.

- 3 cups all-purpose flour
- 1 egg
- ½ cup white sugar
- 1 teaspoon salt
- 4 teaspoons baking powder
- ½ cup chopped pecans
- 1 cup golden raisins
- ¼ cup applesauce
- 1¾ cups eggnog
- ½ teaspoon nutmeg
- ¼ cup vegetable or canola oil
- Splash of rum extract optional
Preheat the oven to 350°F.
Mix the dry ingredients in one bowl and the eggnog, egg, oil, applesauce, and rum extract (if using) in another.
Now combine both mixtures.
Stir in the nuts and raisins.
Divide this batter between a pair of greased loaf pans.
Bake the eggnog bread for 40 minutes or until a toothpick inserted into the middle of a loaf comes out clean.
Let the loaves cool for 10 minutes, then turn out of the pans and let them finish cooling on a wire rack.
