Christmas Eggnog Bread

This holiday bread is moist and tasty. It has pecans and golden raisins, along with eggnog and applesauce. It’s a tasty sweet bread which is ideal for Christmas breakfast.

Ingredients
  

  • 3 cups all-purpose flour
  • 1 egg
  • ½ cup white sugar
  • 1 teaspoon salt
  • 4 teaspoons baking powder
  • ½ cup chopped pecans
  • 1 cup golden raisins
  • ¼ cup applesauce
  • cups eggnog
  • ½ teaspoon nutmeg
  • ¼ cup vegetable or canola oil
  • Splash of rum extract optional

Instructions
 

  • Preheat the oven to 350°F.
  • Mix the dry ingredients in one bowl and the eggnog, egg, oil, applesauce, and rum extract (if using) in another.
  • Now combine both mixtures.
  • Stir in the nuts and raisins.
  • Divide this batter between a pair of greased loaf pans.
  • Bake the eggnog bread for 40 minutes or until a toothpick inserted into the middle of a loaf comes out clean.
  • Let the loaves cool for 10 minutes, then turn out of the pans and let them finish cooling on a wire rack.
