Southern Candied Sweet Potatoes

- 1 tsp. Cinnamon
- 6 Large sweet potatoes
- 1 tsp. Nutmeg
- ½ C. Butter
- 1 Tbsp. Vanilla
- 2 C. Sugar
- Salt to taste
Wash, peel and chop the potatoes into pieces.
Melt the butter in a skillet over medium heat on the stove.
Stir the potatoes into the butter.
Add the nutmeg, cinnamon, sugar and salt to the skillet, and reduce the heat to medium low.
Cover, and cook for 1 hour, or until the potatoes are tender.
Stir in the vanilla once removed from the heat, and serve.
