Christmas Sugar Cookie Bars

If you usually find yourself making the same festive cookies over and over, you might be looking for a fresh idea. There’s nothing wrong with following tradition, of course, and it’s lovely to recreate the cookies your mother or grandmother used to lovingly create. So why not add something new to your cookie selection this Christmas. These frosted treats are sure to go down a treat, and they’re so popular you might even want to make a second batch!

Ingredients
  

For the treats:

  • 1 C. Sugar
  • ¾ C. Butter softened
  • 1 tsp. Baking powder
  • 2 Large eggs at room temperature
  • 2 tsp. Cornstarch
  • 1 tsp. Almond extract
  • 2 C. All purpose flour
  • 1 Tbsp. Vanilla
  • Christmas sprinkles

For the frosting:

  • ½ tsp. Almond extract
  • 1 C. Salted butter softened
  • 2 ½ C. Powdered sugar
  • 1 tsp. Vanilla
  • 4-5 Tbsp. Heavy whipping cream as needed

Instructions
 

  • Heat the oven to 350 degrees.
  • Beat together the butter and sugar until creamy.
  • Add in the eggs, vanilla and almond extract.
  • Mix in the flour, baking powder and cornstarch.
  • Stir in some sprinkles.
  • Spread the mixture onto a parchment lined baking sheet.
  • Bake for 18-20 minutes, or until cooked through. Allow to cool to room temperature.
  • Blend together the butter, powdered sugar, vanilla and almond extract.
  • Slowly add in the heavy whipping cream until the frosting is your desired consistency.
  • Frost the treats, and add additional sprinkles on top.
  • Slice and serve.
