Chicken Salad

There are hundreds of different ways to prepare chicken salad if you take into account all the variables and possible add-ins. You don’t need a lot of ingredients to make a great one though, as the following recipe shows you. Cranberries, almonds and pecans add all the sweetness and crunch you’ll need, while garlic adds another element to the overall flavor. Using a rotisserie chicken eliminates the need for cooking your own, although if you want to poach your own chicken you can absolutely do that instead.

Ingredients
  

  • 1 rotisserie chicken
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt
  • 1 dried cranberries
  • 1 cup almond slivers
  • 1 cup chopped pecans
  • cup mayonnaise
  • ¼ tsp black pepper

Instructions
 

  • Shred the chicken using your fingers or a pair of forks, or finely chop it with a sharp knife.
  • Combine the chicken, garlic, salt, cranberries, nuts, and black pepper in a bowl.
  • Mix in the mayonnaise and serve right away or chill for an hour first.
