Easy Cheesy Chicken Fritters

These super-quick and easy cheesy chicken fritters are a breeze to prepare and cook, and you can have them on the table in just half an hour. They’re low in carbs, making them perfect for a keto or low-carb diet, but you wouldn’t be able to tell since all you can taste in the fritters is deliciousness! Chicken breasts are one of those ingredients we often use to make the same old dishes, but here is a brand new way of using them.

Ingredients
  

  • 2 eggs
  • cup almond flour
  • pounds boneless skinless chicken breast
  • 2 tablespoons each chopped parsley chives and basil
  • 1 cup shredded mozzarella
  • 1 tablespoon olive oil
  • ½ teaspoon garlic powder
  • Salt and black pepper to taste

Instructions
 

  • Cut the chicken into very small pieces with a sharp knife, or you can use a food processor.
  • Put the minced chicken in a bowl and add the eggs, cheese, almond flour, garlic, herbs, salt, and black pepper.
  • Use your hands to squeeze and knead the mixture to combine everything well.
  • Now, heat the oil in a skillet over a moderate heat on the stove.
  • Cook spoonfuls of the chicken fritter mixture, flatting them a bit using a spatula.
  • Fry on both sides until the chicken is cooked through and the fritters are golden brown.
  • Don’t let the fritters touch in the skillet - you can cook them in batches if you need to.
