Cream Cheese Loaf with Cranberries

Although it’s nice to make the same dishes every year for the holidays, it’s also nice to try something different. After all, it could well become a must-make when planning your festive menus. This loaf is made with cream cheese and vanilla, along with cranberries. It would be well received at Thanksgiving or Christmas, whether you have guests over or you want to make something to bring to a holiday party.

Ingredients
  

  • 4 eggs
  • 2 sticks unsalted butter
  • 8 ounces cream cheese
  • 2 cups cranberries
  • 2 cups all-purpose flour
  • teaspoons vanilla extract
  • teaspoons baking soda
  • cups white sugar
  • ½ teaspoon salt

Instructions
 

  • Set the eggs, butter and cream cheese on the countertop until they reach room temperature.
  • Preheat the oven to 350°F and grease a 5x9-inch loaf tin.
  • Beat the butter with the sugar and cream cheese using a mixer.
  • Beat in the vanilla as well as the eggs, one at a time.
  • In another bowl, mix the flour with the baking soda and salt.
  • Now combine the wet mixture with the dry one in whichever bowl is largest.
  • Fold in the cranberries using a wide metal spoon.
  • Transfer the batter into the greased loaf tin.
  • Bake for about an hour or until a toothpick inserted into the center of the loaf comes out clean.
  • Let the cranberry loaf cool for at least 15 minutes, then serve.
