Jamaican Banana Bread Recipe

Ingredients
  

  • 2 Large eggs
  • 2 C. All purpose flour
  • 1 ½ C. Bananas mashed
  • ¾ tsp. Baking soda
  • ¼ C. Plain yogurt
  • ½ tsp. Salt
  • 3 Tbsp. Apple cider
  • 1 C. Sugar
  • ½ tsp. Vanilla extract
  • ¼ C. Butter softened
  • 1 Tbsp. Unsweetened coconut flakes
  • 1 ½ Tbsp. Fresh lime juice
  • ½ C. Unsweetened coconut flakes
  • ½ C. Powdered sugar

Instructions
 

  • Heat the oven to 350 degrees and grease a loaf pan well.
  • Cream together the sugar and butter until creamy and light.
  • Mix in the eggs one at a time.
  • Stir in the flour, salt, baking soda, banana, apple cider, yogurt and vanilla.
  • Fold in the ½ cup of coconut flakes until well combined.
  • Spread the mixture into the loaf pan, and sprinkle with the Tbsp of coconut flakes.
  • Bake for 1 hour, or until cooked through completely.
  • Blend together the lime juice and powdered sugar.
  • Spread the glaze over the warm bread, and allow to set before serving.
