Ingredients
  

  • 2 Large Zucchini
  • 2-3 cup Chicken Shredded
  • ½ cup Buffalo Sauce
  • 4 oz. Cream Cheese Softened
  • 1 ½ cup Mozzarella Cheese Shredded
  • Green Onions For Garnish Chopped

Instructions
 

  • Preheat the oven to 400 degrees.
  • In a bowl, mix together the chicken, cream cheese, buffalo sauce and ½ cup of the mozzarella cheese until well blended.
  • Cut the zucchini in half lengthwise, and scoop out the seeds and flesh from the center of each half.
  • Stuff the zucchini boats with the shredded chicken mixture.
  • Place the boats in a 9x13 baking dish.
  • Top with the shredded mozzarella and bake for 20 minutes.
  • Serve garnished with green onions.
